Blackberry Sparkler
The Blackberry Sparkler is a festive and elegant cocktail for New Year's Eve. Made with a homemade blackberry simple syrup (1 cup blackberries, 1 cup sugar, 1 cup water) and topped with champagne or sparkling wine, this cocktail combines rich berry flavors with effervescence. For the Rim
- 3 tablespoons sugar
- Blackberry simple syrup

- 1 cup blackberries
- 1 cup sugar
- 1 cup water
For the Sparkler
- Champagne or sparkling wine
- Blackberry simple syrup
- For Garnish
- Fresh blackberries
- Sprigs of rosemary

Blackberry Simple Syrup
In a small saucepan, combine blackberries, sugar, and water.
Bring the mixture to a boil, then reduce heat to a simmer for 15 minutes.
Strain out the blackberries and transfer the syrup to a separate container to cool.
Rim of Glass
Pour blackberry simple syrup onto a small plate, wide enough to fit the rim of your champagne glass.
On a separate plate, spread sugar evenly.
Dip the rim of your glass into the syrup, coating it, then dip it into the sugar.
Turn and press the glass into the sugar until well coated. Set aside.
Sparkler
Pour 1-2 tablespoons of blackberry simple syrup into your prepared champagne glass.
Top with your favorite champagne or sparkling wine.
Garnish with a few fresh blackberries and a sprig of rosemary for a festive touch.
