Sweet Potato Pop Tarts

Sweet Potato Pop Tarts are a flaky, buttery treat filled with spiced sweet potato goodness and topped with a luscious sweet potato glaze. Made with store-bought puff pastry, these pop tarts are quick and easy to prepare—perfect for a cozy breakfast or an indulgent fall dessert!

Ingredients
  

For the Pop Tarts

  • 2 sheets puff pastry each 9x12 inches
  • 1 large sweet potato about 1 ½ cups mashed
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ground ginger
  • 1 tsp vanilla extract
  • 1 egg for egg wash

For the Sweet Potato Glaze

  • 2 tbsp mashed sweet potato
  • ½ cup powdered sugar
  • 1-2 tbsp milk adjust for consistency
  • ½ tsp cinnamon
  • ½ tsp vanilla extract

Instructions
 

Step 1: Prepare the Sweet Potato Filling

  • Peel and dice the sweet potato. Boil until fork-tender, about 10-12 minutes.
  • Drain and mash until smooth.
  • Mix in brown sugar, cinnamon, nutmeg, ginger, and vanilla extract. Let cool.

Step 2: Cut the Puff Pastry

  • Unroll both sheets of puff pastry on a floured surface.
  • Cut each sheet into 9 rectangles (3x4 inches), for a total of 18 rectangles.

Step 3: Assemble the Pop Tarts

  • Place 9 rectangles on a baking sheet lined with parchment paper.
  • Spoon 1-2 tablespoons of sweet potato filling onto each rectangle, leaving a border.
  • Brush water around the edges, then cover with the remaining 9 rectangles.
  • Seal edges with a fork and brush with egg wash.

Step 4: Bake

  • Preheat oven to 400°F (200°C).
  • Bake for 10-12 minutes, or until golden and puffed. Cool completely.

Step 5: Make the Glaze

  • In a bowl, whisk mashed sweet potato, powdered sugar, milk, cinnamon, and vanilla. Adjust milk for consistency.

Step 6: Glaze and Serve

  • Drizzle the glaze over cooled pop tarts.
  • Optional: Sprinkle sprinkles, chopped pecans or cinnamon sugar.
